Ingredients
Scale
- 4 cups (500g) all-purpose flour
- 1 cup (230g) unsalted butter, cold
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cup (240ml) whole milk, warmed slightly
- 2¼ teaspoons active dry yeast (1 packet)
- 2 large eggs, divided (1 for dough, 1 for egg wash)
- 1 tablespoon water (for egg wash)
Instructions
- Prepare the Dough: Combine flour, sugar, and salt in a mixing bowl. Activate the yeast by dissolving it in warm milk. Mix the yeast mixture and one egg into the dry ingredients to form a dough. Knead until smooth and elastic, then let it rise for 1-2 hours.
- Prepare the Butter Block: Pound and roll cold butter between parchment paper into an 8×8-inch square. Chill until ready to use.
- Laminate the Dough: Roll the risen dough into a 12×12-inch square, place the butter block diagonally in the center, and fold the dough over the butter. Perform three letter folds, chilling the dough between each fold.
- Shape the Gipfeli: Roll the dough into a rectangle, cut it into triangles, and roll each triangle into a crescent shape. Let the shaped Gipfeli proof for 1-2 hours.
- Bake: Preheat the oven to 400°F (200°C). Brush the Gipfeli with an egg wash (1 egg + 1 tablespoon water) and bake for 15-20 minutes until golden brown.
Notes
- Use European-style butter for the best flavor and texture.
- Keep all ingredients and tools cold to ensure proper layering.
- For sweet variations, add almond cream, chocolate, or jam before rolling. For savory options, include ham and cheese or herb-infused butter.
