Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Prepare the chicken: Season the chicken breasts with salt and pepper. Lightly dredge in flour, shaking off excess.
  • Sear the chicken: Heat 2 tablespoons butter and 2 tablespoons olive oil in a skillet over medium heat. Cook the chicken for 3-4 minutes per side until golden brown. Transfer to the prepared baking dish.
  • Make the mushroom sauce: In the same skillet, melt 3 tablespoons butter and sauté the mushrooms for about 5 minutes until softened.

  • Sprinkle shredded mozzarella and Parmesan cheese over the top.
  • Bake for 25-30 minutes until the cheese is golden and bubbly.
  • Let it rest for 5 minutes before serving. Garnish with fresh parsley and serve with mashed potatoes, rice, or roasted vegetables.
