- 8 sheets phyllo dough (thawed if frozen)
- 2 cups crumbled feta cheese
- 1 cup cottage cheese (optional, for extra creaminess)
- 1 large egg
- ½ cup plain yogurt
- ¼ cup sunflower or olive oil
- Pinch of salt
- Butter or oil for brushing
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix feta, cottage cheese, egg, and a pinch of salt.
- In a small bowl, combine yogurt and oil.
- Lightly grease a baking dish or round pan.
- Place one sheet of phyllo dough in the pan and brush with the yogurt-oil mixture.
- Repeat with another sheet, then add a layer of the cheese filling.
- Continue layering dough and cheese, brushing each dough layer with yogurt mix.
- Finish with 2–3 layers of phyllo, brushing the top well.
- Bake for 30 minutes or until golden and crisp.
- Cool slightly, then slice and serve warm.
Notes
- Substitute ricotta for cottage cheese if preferred.
- Use a round or square pan depending on preference.
- Leftovers reheat well in a toaster oven or pan.
